  5. 1 tbsp cornflour
  6. 2 sheets frozen ready-rolled shortcrust pastry, partially thawed
  7. 1 egg, lightly beaten
  8. 2 tsp demerara sugar
  9. Thickened cream, to support

  1. Place apple, caster sugar, lemon juice, cinnamon and 2 tablespoons Cool water in a saucepan on top of higher than medium-high heat. Cook for 4 minutes or until apple has softened. complement cornflour and 1 tablespoon cold water in a bowl. Add to apple mixture. Bring to the boil. separate from heat. Cool.
  2. Preheat oven to 180u00b0C/160u00b0C fan-forced. Lightly grease 4 holes of a 6-hole, 3/4 cup-capacity texas muffin pan. Using a 13cm round cutter, cut 4 rounds from pastry. Using a 9cm round cutter, cut 4 rounds from steadfast pastry.
  3. Line holes considering larger pastry rounds. Fill similar to apple mixture. Brush edges when egg. summit zenith when smaller pastry rounds. Brush subsequently egg. Sprinkle subsequent to demerara sugar (if freezing, see note).
  4. Bake for 35 minutes or until golden and irritated through. Stand for 10 minutes. Serve.
